Standing Ovation is developing the production of casein via precision fermentation to enable non-animal-derived cheese and milk substitutes.
BACKGROUND
Founded in June 2020, Standing Ovation is based in Paris, Évry-Courcouronnes and Saclay.
DESCRIPTIF OF THE PRODUCTS / SERVICES / TECHNOLOGY
The company is an ingredients supplier. The casein fermentation production process is currently in the industrial pilot stage. Standing Ovation has also developed a method for transforming its caseins into traditional cheese substitutes.
